<p>El Italiano serves two sizes of pizza: Personal (S/.23.50 - .25.00 each) and Grande (S/.28.50 -- S/.43.00 each). There isn't a great difference between them.  <b>Nobrium For Sale</b>, If I were the owner of El Italiano, I'd call them "Small" and "Medium" and add an additional "Large" size. But who's asking the gringa.</p>

I'm sorry I don't have photos. I don't photograph the food I eat (unless someone is paying me), and El Italiano's website has miniscule photos at like 10 dpi, so it wasn't any use trying to use those.</p>
<p>In addition to making really good pizza, El Italiano has other merits won't find in the average Lima pizza shop, <b>Nobrium For Sale</b>.</p>
<p>You can choose from three types of salads (S/17.00 - S/35.00) in Personal and Grande portions.  (A Personal was more than enough as an appetizer for me and El Fotografo.) And before our pizzas arrived, the waiter scooted a free basket of melted-cheese/garlic bread onto the table.</p>
<p>The wine list favors Italian and South American wines as well as low-budget servings by the glass and the half jarra. But if you're picky and frugal, do as the locals do and BYOB. The restaurant doesn't blink an eye at uncorking your bottle of <a href="http://www.altoslashormigas.com/" target="_blank">Altos</a> or Noble; an eight-soles corking fee will show up on your <em>cuenta</em>.</p>
<p>Just be sure to ask for your cork back when the waiter opens the bottle if you plan to take any wine home with you. Otherwise, you'll have to ride home with your thumb in the bottle.</p>

Call it <em>haute cuisine</em> with a political bite.

That's what some foreign dignitaries are tucking into at a top eatery in Lima this week, when the APEC Leader's Summit concludes with a special focus on the world economic crisis.

Pescados Capitales, on the city's gastronomic corridor of Avenida La Mar, is serving up a menu of original dishes that salute and satirize "Los Pecados de la APEC" (The Sins of APEC). Overseen by head chef Wilfredo Castillo and owner Nguyen Chávez, the APEC dishes feature "summit" gatherings of classic Peruvian foods like ceviche (raw marinated fish) and lúcuma (a sweet Amazonian fruit), paired with ingredients associated with China, Mexico, the United States and some of the other 21 visiting nations.  

The big question is, said Chávez, 38, in a recent interview, will the flavors/countries dominate one another, or cooperate in the next decade?

"Fuerza Asiatica" (Asian Strength, equivalent US) is a tip of the toque to Asia's economic leverage, the driving force behind the APEC meetings. <!--more-->The Pescados Capitales entree features a typical Peruvian ceviche of lenguado (a white fish), octopus and shrimp, marinated in an Asian soy- and oyster sauce tinged with tamarind, a typical Peruvian ingredient.

"That is the most Asian dish on the menu," said Castillo, 46, during recent a tasting session to determine the final dishes. "We had to include that."

"A PEC-ar" (To Sin, .50) brings together South American lenguado, Asian octopus and North American shrimp, prepared as a ceviche with three typical Peruvian sauces (rocoto, yellow <em>aji </em>and basil).  "This dish symbolizes the spirit of economic cooperation that should guide the member nations of APEC," said Chávez, a former anthropologist who weaves political commentary into the weekly menu descriptions.

"Los visitantes" (The Visitors, .75) finds Peruvian tuna "visited" by a red wine sauce flavored with honey and <em>aji</em> (a mild Peruvian chile), along with sweetened fried shrimp and <em>arroz chaufa</em>, a fried rice made popular in Peru by Chinese immigrants.

Not all dishes represent a balance of power between nations. This is Peru, after all, where in two decades the nation's cuisine has gone from being "overlooked...to the hottest trend in South America," notes this month's Condé Nast Portfolio. Castillo's chefs can't help but be biased toward Peru's culinary high notes.

In "El dueño de casa" (Master of the House, .50), a hefty portion of "presidential-sealed tuna" (i.e., Peru) "rules the house" and thus invites that "classic of classics, rocoto relleno [Peruvian-style stuffed pepper] brimming with seafood, raisins, carrots and split peas."

What is the connection between that abundant dish of all-Peruvian ingredients, APEC and the world economy?

"That Peru is doing very well despite the world financial crisis," said Chávez, referring to Peru's robust 9.8% GDP to date for 2008. "There is no crisis here!"

Like nearby cevicheria La Mar, the hot spot owned by celebrity chef Gastón Acurio, Pescados Capitales may see fewer regular customers this week due to security roadblocks being set up throughout Lima. Nevertheless, Chávez is ordering extra supplies of fish and other ingredients to accommodate delegates, whose offices have been calling since last week to make reservations.

"Representatives for two heads of state and one first lady have contacted us to express interest," said Chavez. "But we won't know exactly when they are coming until the last minute, for security reasons."

And what might foreign dignitaries make of his menu's tongue-in-cheek warning to APEC countries to avoid the sins of avarice and envy, in order to advance economic cooperation?

"I think visitors will enjoy the menu [descriptions]," said Chavez. "But above all, they'll like the food, the service and the atmosphere. Everybody will leave with a good taste in their mouth."

Call it <em>haute cuisine</em> with a political bite.

That's what some foreign dignitaries are tucking into at a top eatery in Lima this week, when the APEC Leader's Summit concludes with a special focus on the world economic crisis.

Pescados Capitales, on the city's gastronomic corridor of Avenida La Mar, is serving up a menu of original dishes that salute and satirize "Los Pecados de la APEC" (The Sins of APEC). Overseen by head chef Wilfredo Castillo and owner Nguyen Chávez, the APEC dishes feature "summit" gatherings of classic Peruvian foods like ceviche (raw marinated fish) and lúcuma (a sweet Amazonian fruit), paired with ingredients associated with China, Mexico, the United States and some of the other 21 visiting nations.  

The big question is, said Chávez, 38, in a recent interview, will the flavors/countries dominate one another, or cooperate in the next decade?

"Fuerza Asiatica" (Asian Strength, equivalent US) is a tip of the toque to Asia's economic leverage, the driving force behind the APEC meetings. <!--more-->The Pescados Capitales entree features a typical Peruvian ceviche of lenguado (a white fish), octopus and shrimp, marinated in an Asian soy- and oyster sauce tinged with tamarind, a typical Peruvian ingredient.

"That is the most Asian dish on the menu," said Castillo, 46, during recent a tasting session to determine the final dishes. "We had to include that."

"A PEC-ar" (To Sin, .50) brings together South American lenguado, Asian octopus and North American shrimp, prepared as a ceviche with three typical Peruvian sauces (rocoto, yellow <em>aji </em>and basil).  "This dish symbolizes the spirit of economic cooperation that should guide the member nations of APEC," said Chávez, a former anthropologist who weaves political commentary into the weekly menu descriptions.

"Los visitantes" (The Visitors, .75) finds Peruvian tuna "visited" by a red wine sauce flavored with honey and <em>aji</em> (a mild Peruvian chile), along with sweetened fried shrimp and <em>arroz chaufa</em>, a fried rice made popular in Peru by Chinese immigrants.

Not all dishes represent a balance of power between nations. This is Peru, after all, where in two decades the nation's cuisine has gone from being "overlooked...to the hottest trend in South America," notes this month's Condé Nast Portfolio. Castillo's chefs can't help but be biased toward Peru's culinary high notes.

In "El dueño de casa" (Master of the House, .50), a hefty portion of "presidential-sealed tuna" (i.e., Peru) "rules the house" and thus invites that "classic of classics, rocoto relleno [Peruvian-style stuffed pepper] brimming with seafood, raisins, carrots and split peas."

What is the connection between that abundant dish of all-Peruvian ingredients, APEC and the world economy?

"That Peru is doing very well despite the world financial crisis," said Chávez, referring to Peru's robust 9.8% GDP to date for 2008. "There is no crisis here!"

Like nearby cevicheria La Mar, the hot spot owned by celebrity chef Gastón Acurio, Pescados Capitales may see fewer regular customers this week due to security roadblocks being set up throughout Lima. Nevertheless, Chávez is ordering extra supplies of fish and other ingredients to accommodate delegates, whose offices have been calling since last week to make reservations.

"Representatives for two heads of state and one first lady have contacted us to express interest," said Chavez. "But we won't know exactly when they are coming until the last minute, for security reasons."

And what might foreign dignitaries make of his menu's tongue-in-cheek warning to APEC countries to avoid the sins of avarice and envy, in order to advance economic cooperation?

"I think visitors will enjoy the menu [descriptions]," said Chavez. "But above all, they'll like the food, the service and the atmosphere. Everybody will leave with a good taste in their mouth."

Given the ubiquitousness of inferior pizza in Lima, places like El Italiano are a godsend.</p>
<p>El Italiano serves two sizes of pizza: Personal (S/.23.50 - .25.00 each) and Grande (S/.28.50 -- S/.43.00 each). There isn't a great difference between them.  <b>Nobrium For Sale</b>, If I were the owner of El Italiano, I'd call them "Small" and "Medium" and add an additional "Large" size. But who's asking the gringa.</p>

I'm sorry I don't have photos. I don't photograph the food I eat (unless someone is paying me), and El Italiano's website has miniscule photos at like 10 dpi, so it wasn't any use trying to use those.</p>
<p>In addition to making really good pizza, El Italiano has other merits won't find in the average Lima pizza shop, <b>Nobrium For Sale</b>.</p>
<p>You can choose from three types of salads (S/17.00 - S/35.00) in Personal and Grande portions.  (A Personal was more than enough as an appetizer for me and El Fotografo.) And before our pizzas arrived, the waiter scooted a free basket of melted-cheese/garlic bread onto the table.</p>
<p>The wine list favors Italian and South American wines as well as low-budget servings by the glass and the half jarra. But if you're picky and frugal, do as the locals do and BYOB. The restaurant doesn't blink an eye at uncorking your bottle of <a href="http://www.altoslashormigas.com/" target="_blank">Altos</a> or Noble; an eight-soles corking fee will show up on your <em>cuenta</em>.</p>
<p>Just be sure to ask for your cork back when the waiter opens the bottle if you plan to take any wine home with you. Otherwise, you'll have to ride home with your thumb in the bottle.</p>

Call it <em>haute cuisine</em> with a political bite.

That's what some foreign dignitaries are tucking into at a top eatery in Lima this week, when the APEC Leader's Summit concludes with a special focus on the world economic crisis.

Pescados Capitales, on the city's gastronomic corridor of Avenida La Mar, is serving up a menu of original dishes that salute and satirize "Los Pecados de la APEC" (The Sins of APEC). Overseen by head chef Wilfredo Castillo and owner Nguyen Chávez, the APEC dishes feature "summit" gatherings of classic Peruvian foods like ceviche (raw marinated fish) and lúcuma (a sweet Amazonian fruit), paired with ingredients associated with China, Mexico, the United States and some of the other 21 visiting nations.  

The big question is, said Chávez, 38, in a recent interview, will the flavors/countries dominate one another, or cooperate in the next decade?

"Fuerza Asiatica" (Asian Strength, equivalent US) is a tip of the toque to Asia's economic leverage, the driving force behind the APEC meetings. <!--more-->The Pescados Capitales entree features a typical Peruvian ceviche of lenguado (a white fish), octopus and shrimp, marinated in an Asian soy- and oyster sauce tinged with tamarind, a typical Peruvian ingredient.

"That is the most Asian dish on the menu," said Castillo, 46, during recent a tasting session to determine the final dishes. "We had to include that."

"A PEC-ar" (To Sin, .50) brings together South American lenguado, Asian octopus and North American shrimp, prepared as a ceviche with three typical Peruvian sauces (rocoto, yellow <em>aji </em>and basil).  "This dish symbolizes the spirit of economic cooperation that should guide the member nations of APEC," said Chávez, a former anthropologist who weaves political commentary into the weekly menu descriptions.

"Los visitantes" (The Visitors, .75) finds Peruvian tuna "visited" by a red wine sauce flavored with honey and <em>aji</em> (a mild Peruvian chile), along with sweetened fried shrimp and <em>arroz chaufa</em>, a fried rice made popular in Peru by Chinese immigrants.

Not all dishes represent a balance of power between nations. This is Peru, after all, where in two decades the nation's cuisine has gone from being "overlooked...to the hottest trend in South America," notes this month's Condé Nast Portfolio. Castillo's chefs can't help but be biased toward Peru's culinary high notes.

In "El dueño de casa" (Master of the House, .50), a hefty portion of "presidential-sealed tuna" (i.e., Peru) "rules the house" and thus invites that "classic of classics, rocoto relleno [Peruvian-style stuffed pepper] brimming with seafood, raisins, carrots and split peas."

What is the connection between that abundant dish of all-Peruvian ingredients, APEC and the world economy?

"That Peru is doing very well despite the world financial crisis," said Chávez, referring to Peru's robust 9.8% GDP to date for 2008. "There is no crisis here!"

Like nearby cevicheria La Mar, the hot spot owned by celebrity chef Gastón Acurio, Pescados Capitales may see fewer regular customers this week due to security roadblocks being set up throughout Lima. Nevertheless, Chávez is ordering extra supplies of fish and other ingredients to accommodate delegates, whose offices have been calling since last week to make reservations.

"Representatives for two heads of state and one first lady have contacted us to express interest," said Chavez. "But we won't know exactly when they are coming until the last minute, for security reasons."

And what might foreign dignitaries make of his menu's tongue-in-cheek warning to APEC countries to avoid the sins of avarice and envy, in order to advance economic cooperation?

"I think visitors will enjoy the menu [descriptions]," said Chavez. "But above all, they'll like the food, the service and the atmosphere. Everybody will leave with a good taste in their mouth."

Nevertheless, Chávez is ordering extra supplies of fish and other ingredients to accommodate delegates, whose offices have been calling since last week to make reservations.

"Representatives for two heads of state and one first lady have contacted us to express interest," said Chavez. "But we won't know exactly when they are coming until the last minute, for security reasons."

And what might foreign dignitaries make of his menu's tongue-in-cheek warning to APEC countries to avoid the sins of avarice and envy, in order to advance economic cooperation?

"I think visitors will enjoy the menu [descriptions]," said Chavez. "But above all, they'll like the food, the service and the atmosphere. Everybody will leave with a good taste in their mouth."

<p>El Italiano serves two sizes of pizza: Personal (S/.23.50 - .25.00 each) and Grande (S/.28.50 -- S/.43.00 each). There isn't a great difference between them.  <b>Nobrium For Sale</b>, If I were the owner of El Italiano, I'd call them "Small" and "Medium" and add an additional "Large" size. But who's asking the gringa.</p>

I'm sorry I don't have photos. I don't photograph the food I eat (unless someone is paying me), and El Italiano's website has miniscule photos at like 10 dpi, so it wasn't any use trying to use those.</p>
<p>In addition to making really good pizza, El Italiano has other merits won't find in the average Lima pizza shop, <b>Nobrium For Sale</b>.</p>
<p>You can choose from three types of salads (S/17.00 - S/35.00) in Personal and Grande portions.  (A Personal was more than enough as an appetizer for me and El Fotografo.) And before our pizzas arrived, the waiter scooted a free basket of melted-cheese/garlic bread onto the table.</p>
<p>The wine list favors Italian and South American wines as well as low-budget servings by the glass and the half jarra. But if you're picky and frugal, do as the locals do and BYOB. The restaurant doesn't blink an eye at uncorking your bottle of <a href="http://www.altoslashormigas.com/" target="_blank">Altos</a> or Noble; an eight-soles corking fee will show up on your <em>cuenta</em>.</p>
<p>Just be sure to ask for your cork back when the waiter opens the bottle if you plan to take any wine home with you. Otherwise, you'll have to ride home with your thumb in the bottle.</p>

Call it <em>haute cuisine</em> with a political bite.

That's what some foreign dignitaries are tucking into at a top eatery in Lima this week, when the APEC Leader's Summit concludes with a special focus on the world economic crisis.

Pescados Capitales, on the city's gastronomic corridor of Avenida La Mar, is serving up a menu of original dishes that salute and satirize "Los Pecados de la APEC" (The Sins of APEC). Overseen by head chef Wilfredo Castillo and owner Nguyen Chávez, the APEC dishes feature "summit" gatherings of classic Peruvian foods like ceviche (raw marinated fish) and lúcuma (a sweet Amazonian fruit), paired with ingredients associated with China, Mexico, the United States and some of the other 21 visiting nations.  

The big question is, said Chávez, 38, in a recent interview, will the flavors/countries dominate one another, or cooperate in the next decade?

"Fuerza Asiatica" (Asian Strength, equivalent US) is a tip of the toque to Asia's economic leverage, the driving force behind the APEC meetings. <!--more-->The Pescados Capitales entree features a typical Peruvian ceviche of lenguado (a white fish), octopus and shrimp, marinated in an Asian soy- and oyster sauce tinged with tamarind, a typical Peruvian ingredient.

"That is the most Asian dish on the menu," said Castillo, 46, during recent a tasting session to determine the final dishes. "We had to include that."

"A PEC-ar" (To Sin, .50) brings together South American lenguado, Asian octopus and North American shrimp, prepared as a ceviche with three typical Peruvian sauces (rocoto, yellow <em>aji </em>and basil).  "This dish symbolizes the spirit of economic cooperation that should guide the member nations of APEC," said Chávez, a former anthropologist who weaves political commentary into the weekly menu descriptions.

"Los visitantes" (The Visitors, .75) finds Peruvian tuna "visited" by a red wine sauce flavored with honey and <em>aji</em> (a mild Peruvian chile), along with sweetened fried shrimp and <em>arroz chaufa</em>, a fried rice made popular in Peru by Chinese immigrants.

Not all dishes represent a balance of power between nations. This is Peru, after all, where in two decades the nation's cuisine has gone from being "overlooked...to the hottest trend in South America," notes this month's Condé Nast Portfolio. Castillo's chefs can't help but be biased toward Peru's culinary high notes.

In "El dueño de casa" (Master of the House, .50), a hefty portion of "presidential-sealed tuna" (i.e., Peru) "rules the house" and thus invites that "classic of classics, rocoto relleno [Peruvian-style stuffed pepper] brimming with seafood, raisins, carrots and split peas."

What is the connection between that abundant dish of all-Peruvian ingredients, APEC and the world economy?

"That Peru is doing very well despite the world financial crisis," said Chávez, referring to Peru's robust 9.8% GDP to date for 2008. "There is no crisis here!"

Like nearby cevicheria La Mar, the hot spot owned by celebrity chef Gastón Acurio, Pescados Capitales may see fewer regular customers this week due to security roadblocks being set up throughout Lima. Several posts ago, I incorrectly announced that Cafe Ayllu on Cusco's Plaza de Armas had closed due to a pending rent increase.

My source was wrong; what I found out when I visited Cusco last week is that the Ayllu is still open, for now. (It will close soon.) The real news is: fast-food chain McDonald's has opened a franchise just three doors down from the Ayllu.

The McDonald's opened last Wednesday with little fanfare, according to John at the South American Explorers Clubhouse in Cusco.

"They sort of snuck in," he says. "There wasn't any word about it."

The restaurant is keeping a relatively low profile, even with its logo, which is typically a bright yellow "M." The Plaza de Armas McDonald's has a discreet brown "M" out front.

"That's their concession," sneers John. (Yes, poor McDonald's, what a sacrifice, turning off the neon yellow!)

I stopped by the Plaza de Armas McDonald's last Friday to snap a few photos. The interior was decorated in a sort of mock Inca style, with trapezoidal doorframes and a wall of folkloric masks. The menu was exactly the same McDonald's fare: big Macs, mega fries, super Cokes.

So what's my beef with McDonald's?

Its presence cheapens the historic city plaza and dishonors Cusco's cultural heritage. The restaurant is there to grab tourist dollars and gives little to nothing back to the Peruvian people. Profits funnel directly to the international conglomerate, not to the Peruvian economy.

Let McDonald's set up shop on a side street; it has no place on the Plaza de Armas, which is one of the most beautiful and historic city squares in South America.

Cusco's Plaza de Armas was named "<a href="http://www.pps.org/great_public_spaces/one?public_place_id=612" target="_blank">One of 60 Great Places in the World</a>" by the Project for Public Spaces (PPS).

PPS describes the plaza's historic significance:
<blockquote>The Plaza de Armas was called ‘Huacaypata’ after its construction during the Inca Empire. The original plaza was twice the current size, and functioned as the cultural center of Inca life. Cuzco, which was the capital of the Inca Empire, was designed in the shape of a Puma to reflect their Inca animal mythology. Historians proclaim the plaza was intentionally built at the location of the heart of the Puma, in the center of the city. The location of the Plaza is no coincidence. The Plaza is used for most of the city’s events, gatherings, and festivals. Historians feel that the Plaza functioned as the cultural center, or "heart," of the Inca Empire.

In 1532 Spanish Conquistador Francisco Pizarro defeated the Inca Empire and took control of Cuzco, renaming the Plaza to "Plaza de Armas." The Spanish reduced the size of the Plaza by building two Churches, la Catedral and la Compañia. La Catedral was built where the palace of Inca Wirancocha once stood. La Compañia was built in 1571 by the Jesuits during the time of Wayna Capac, the last ruler of the unconquered empire. An earthquake in 1650 destroyed the church leading to its immediate reconstruction, which resulted in one of the most beautiful churches in Latin America. The Plaza de Armas portrays the city's diverse history while remaining the center of Cuzco life and culture.</blockquote>
As the "heartbeat" of Cusco city, the Plaza de Armas is vibrant, remarkable place. Restaurants and cafes are, of course, part of what makes the plaza vital today. However, there is a considerable difference between the local restaurants that have traditionally lined the plaza and the new McDonalds franchise that just opened its doors last week.

Longstanding cafes like the Ayllu have sustained the city's social and intellectual life through good times and bad. During the 1980s and '90s, when <a href="http://en.wikipedia.org/wiki/Shining_Path" target="_blank">Shining Path </a>activity swept through the Andes and many foreigners were afraid to visit Peru, the Ayllu and other local restaurants keep their doors open and welcomed hungry locals and tourists. It was not easy to keep a restaurant thriving during the years, and some failed. But those that stuck it out did more than sustain a business: they made havens for people seeking good food and community. 

Where was McDonald's during the brutal years of terrorism? Where was the big yellow "M" during the lean, dangerous times when the city's tourism industry was sustained by intrepid backpackers?

MacDonald's couldn't have cared less then about Cusco.

Now that Machu Picchu has been declared one of the <a href="http://www.new7wonders.com/classic/en/n7w/results/c/MachuPicchu/" target="_blank">new seven wonders of the world </a>(2007) and terrorism has been largely eradicated in the Andes, the big conglomerates want a piece of the action. There is a lot of money to be made in Cusco, and McDonalds has muscled its way into a piece of prime real estate on the Plaza de Armas, ousting another mom-and-pop restaurant.

If my visit last week was any indication, the franchise will rake in a lot of <em>soles</em>.  A lot.

Tourists visiting the Plaza de Armas have a choice, however. They can plunk down 15 soles for a big Mac made of nonPeruvian ingredients, whose profits don't benefit Peru, or they can enjoy a nice meal at one of the many local restaurants around the Plaza.

Better yet, they can venture into a side street to find a less pricey restaurant that serves excellent local fare.

I know what my choice is.
