		<description>Chilcano is great - but you MUST also try the chupe. It is also served as a soup, with fish, but it is much denser and stronger than the chilcano. Absolutely perfect for the winter.

Might I recommend the Cantarrana, in Barranco, right behind the Metro supermarket. Great place for lunch on the weekends, they make amazing chupes and though I haven&#039;t tried them, their chilcanos must be great as well (since pretty much everything on the menu is - try the shellfish rissotto, it&#039;s a must).</description>

I confess that I&#039;ve only had caldo de gallina once in my life and that example wasn&#039;t very good. All around Lima are 24-hour restaurants serving up &quot;hen in a cauldron.&quot; 

Does anyone know of any good places, outside of Paracas?</description>

A few years ago I spent a week on vacation in Paracas and somehow I got a cold. Since we were right next to el puerto I had one of the stands make me a Chilcano. It was awesome! But it did not get rid of my cold.

The next day on the way to the Tambo Colorado ruins, we stopped along the way and had one of the pensiones make me a caldo de gallina for the ride back. What a delicious meal! That took care of the cold. To this day, my wife asks if we are ever going back to the place for more.
